Saison History
After numerous years spent working with food and living overseas, both the Porter and Dalton families craved locally made salumi that emulated the distinct qualities and attributes of the old world, yet with flavour profiles that suited the well travelled pallet, thus was born, Saison Small Goods.
Chef Damon Porter is our chief sausage stuffer and salumi artisan, a humble unassuming skinny fella from the Sunshine Coast who has spent the last 20 years eating and cooking his way around the world and who is now following his distinct passion, well hung meat. Whilst raising a young family, Damon spends the rest of his time crafting Saison Small Goods, racking his brains for the next perfect flavour profile combination.
Husband and wife team Jerome and Antrim Dalton complete the trio and are paramount in simply getting sh*t done, sausage testing and searching for the next well hung idea.
The Saison team are excited about the future of Small Goods in Australia and cannot wait to further develop the range of both wholesale small goods and retail ready items.
